Indian Style Roasted Duck Leg with Irish Roast Potatoes

- ●4-6 medium-sized potatoes Irish roast potatoespeeled and chopped into large chunks
- ●1 large onion, 2 cloves of garlic, 2 large carrots Roasted vegetableschopped into large pieces
- ●2 tsp Indian spice blend
- ●2 tbsp Ghee or vegetable oil
- ● Salt and pepper
- ●1 cup Roasted dense tomato saucesee notes for recipe

Preheat the oven to 425°F (220°C).

Season the duck leg with salt, pepper, and Indian spice blend.

Heat ghee or vegetable oil in a large oven-safe skillet over medium-high heat. Sear the duck leg until browned on all sides, about 2-3 minutes per side.

Transfer the skillet to the preheated oven and roast the duck leg for 20-25 minutes or until the internal temperature reaches 165°F (74°C).

Meanwhile, toss the chopped potatoes with a drizzle of oil, salt, and pepper on a baking sheet. Roast in the oven for 20-25 minutes or until golden brown and crispy.

Add the chopped onion, garlic, and carrots to the skillet with the duck leg and continue to roast for another 10-12 minutes or until the vegetables are tender.

Serve the duck leg with the roasted potatoes and vegetables, spooning some of the pan juices over the top.
