Lentil Pilaf Mediterranean Bowl
A hearty and flavorful Mediterranean-inspired dish made with lentils and xtra fluffy pilaf, finished with fresh herbs.
Ingredients
- β1 cup lentil
- β2 cups xtra fluffy pilaf
- β2 tbsp mediterranean
- β2 tbsp olive oil
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 medium tomatodiced
- β1/4 cup feta cheesecrumbled
Instructions

Heat the olive oil in a large saucepan over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the lentils, tomato, and Mediterranean seasoning. Cook for 2 minutes.

Add 2 cups of water and bring to a boil. Reduce heat to low and simmer for 20 minutes.

While the lentils are cooking, prepare the pilaf according to package instructions.

To assemble the bowls, divide the cooked lentil mixture between four bowls.

Top each bowl with a scoop of pilaf, crumbled feta cheese, and a sprinkle of fresh herbs.
