Italian Potato Dumplings
A traditional Italian comfort food inspired by Slovakian potato dumplings, this dish combines the fluffiness of Slovakian potato dumplings with the flavors of Italy.
Ingredients
- β2 cups xtra flour
- β2 large fluffy potatopeeled and grated
- β1 package slovakian potato dumplings
- β1 large potatopeeled and diced
- β1 tsp italian seasoning
- β1 tsp salt
- β1 cup parmesan cheese
- β4 tbsp butter

1. In a large mixing bowl, combine the xtra flour and italian seasoning.

2. Gradually add the grated fluffy potato and mix until a dough forms.

3. Knead the dough for 5 minutes until smooth.

4. Wrap the dough in plastic wrap and let it rest for 30 minutes.

5. Divide the dough into 8 equal pieces.

6. Roll each piece into a ball and then flatten slightly into a disk shape.

7. Place a spoonful of the diced potato in the center of each disk.

8. Fold the dough over the potato and press the edges together to seal the dumpling.

9. Bring a large pot of salted water to a boil and cook the dumplings for 10-12 minutes or until they float to the surface.
