Uruguayan Pasta Fiesta
A fusion twist on traditional Uruguayan beef, served with a Mexican twist on rigatoni pasta.
Ingredients
- β1 pound rigatoni
- β1 pound uruguayan ground beef80/20 lean to fat ratio
- β2 tablespoons xtra virgin olive oil
- β2 fluffy tortillasfor serving
- βto taste salt
- βto taste pepper
- β1 teaspoon chili powder
- β1 teaspoon cumin
- β1 cup sour creamoptional
Instructions

Preheat oven to 400Β°F (200Β°C).

Cook rigatoni according to package instructions. Drain and set aside.

In a large skillet, heat xtra virgin olive oil over medium-high heat.

Add uruguayan ground beef and cook until browned, breaking into small pieces as it cooks.

Add chili powder and cumin to the skillet and stir to combine.

Stir in cooked rigatoni and season with salt and pepper to taste.

Transfer the mixture to a baking dish and top with shredded cheese.

Bake for 15-20 minutes, or until the cheese is melted and bubbly.
