Saudi Lamb Stew
A hearty and flavorful lamb stew inspired by Saudi Arabian cuisine. Perfect for a cold winter evening.
Ingredients
- ●1.5 pounds Lamb shoulder
- ●2 medium Onion
- ●3 cloves Garlic
- ●2 cups (fresh or canned) Tomatoes
- ●2 large Potatoes
- ●1 cup (peeled and chopped) Carrots
- ●2 tablespoons Olive oil
- ●to taste Salt
- ●to taste Black pepper
- ●1 teaspoon Cumin
- ●1 teaspoon Coriander

Heat the oil in a large Dutch oven over medium-high heat.

Add the lamb and brown on all sides, about 5 minutes.

Remove the lamb and set aside.

Reduce heat to medium and sauté the onion and garlic until softened, about 5 minutes.

Add the cumin and coriander, cook for 1 minute.

Add the tomatoes, potatoes, and carrots, cook for 5 minutes.

Return the lamb to the pot, season with salt and pepper.

Bring to a boil, then cover and transfer to the oven.

Bake at 300°F (150°C) for 2 1/2 hours, or until the lamb is tender.
