French Vegetarian Gratin
A creamy, comforting gratin made with thinly sliced veggies and topped with a crunchy breadcrumb mixture.

Ingredients
- β1 block, drained and cubed xtra firm tofu
- β1 large, thinly sliced french red onion
- β2 large, sliced juicy portobello mushroom
- β1 cup, shredded gratin cheese blend
- β2 tablespoons all-purpose flour
- β2 tablespoons unsalted butter
- β2 sprigs, chopped fresh thyme

Instructions

Preheat oven to 375Β°F (190Β°C).

In a large bowl, toss together tofu, onion, and mushroom.

In a separate bowl, mix together flour and a pinch of salt.

Add the flour mixture to the tofu mixture and toss to coat.

Transfer the mixture to a baking dish and dot the top with butter.

Sprinkle the gratin cheese blend over the top.
