Gomen Be Sega (Ethiopian Collard Greens Stew)
A traditional Ethiopian stew made with collard greens and spices.

Ingredients
- β1 bunch Collard greensstemmed and chopped
- β2 tsp Gomen (Ethiopian collard greens spice mix)available in most Ethiopian markets or online
- β2 tbsp Light vegetable oilfor frying onions
- β1 medium Onionchopped
- β2 cloves Garlicminced
- β1 Xtra hot pepperfinely chopped (optional)
- βto taste Salt
- βto taste Black pepper

Instructions

Heat oil in a large pan over medium heat.

Add onions and cook until softened (4-5 minutes).

Add garlic and cook for 1 minute.

Add chopped collard greens, Gomen spice mix, salt, and black pepper.

Mix well and cook for 5 minutes.

Add 2 cups of water and bring to a boil.
