Welsh Lamb Rarebit
A twist on the classic Welsh dish, this recipe combines tender lamb with a rich, cheesy sauce. Perfect for a hearty dinner.
Ingredients
- β1 1/2 pounds LambBoneless leg of lamb
- β2 tablespoons Butter
- β2 tablespoons All-purpose flour
- β1 cup Milk
- β1 cup, grated Cheddar cheese
- β1/4 cup, grated Xtra sharp cheddarFor extra flavor
- β2 teaspoons Nutty brown mustard
- β2 tablespoons British aleFor added depth

Preheat oven to 400Β°F (200Β°C). Season the lamb with salt and pepper.

Sear the lamb in a hot skillet over medium-high heat for 2-3 minutes on each side.

Transfer the lamb to a baking dish and roast for 20-25 minutes, or until cooked to your liking.

While the lamb is cooking, make the rarebit sauce.

In a medium saucepan, melt the butter over medium heat.

Add the flour and cook for 1-2 minutes, or until the mixture is lightly golden.

Slowly pour in the milk, whisking constantly to avoid lumps.

Bring the mixture to a simmer and cook for 2-3 minutes, or until it thickens.

Remove from heat and stir in the cheddar cheese, xtra sharp cheddar, mustard, and ale until smooth.
