Bo Kho Beef Stew
A hearty and flavorful Vietnamese beef stew made with tender beef, aromatic spices, and a rich broth.
Ingredients
- β 1 pound beef (such as chuck or round)cut into 1-inch cubes
- β 2 tablespoons vegetable oil
- β 2 onionschopped
- β 3 cloves garlicminced
- β 1 tablespoon grated fresh ginger
- β 1 teaspoon ground cumin
- β 1 teaspoon ground coriander
- β 1/2 teaspoon ground cinnamon
- β 1/2 teaspoon ground cardamom
- β 1/4 teaspoon ground cayenne pepper
- β 1 cup beef broth
- β 1 cup water
- β 1 tablespoon fish sauce
- β 1 tablespoon soy sauce
- β 1 tablespoon brown sugar
- β 2 tablespoons chopped fresh cilantro
- β 2 tablespoons chopped scallions
Instructions

Heat oil in a large Dutch oven over medium-high heat.

Add onions and cook until browned, about 5 minutes.

Add garlic and ginger and cook for 1 minute.

Add beef and cook until browned, about 5 minutes.

Add cumin, coriander, cinnamon, cardamom, and cayenne pepper. Cook for 1 minute.

Add beef broth, water, fish sauce, soy sauce, and brown sugar. Bring to a boil.

Reduce heat to low and simmer, covered, for 1 1/2 hours, or until beef is tender.

Stir in cilantro and scallions. Serve hot over rice or noodles.
