Smoky Chicken Tinga Tacos
Tinga is a traditional Mexican dish made with shredded chicken cooked in a smoky chipotle tomato sauce.

- β2-3 peppers Xtra-smoky chipotle peppers in adobo saucedepending on desired heat level
- β2 tablespoons Mexican xtra-virgin olive oilfor sautΓ©ing
- β1 medium Oniondiced
- β3 cloves Garlicminced
- β1 (14.5 oz) can Canned diced tomatoesdrained
- β1 cup Chicken brothlow sodium
- β1 teaspoon Tinga seasoning blendor to taste
- βto taste Salt and pepperfor seasoning
- β8-10 corn tortillas Tortillasfor serving

Heat the oil in a large skillet over medium heat.

Add the onion and cook until softened, about 3-4 minutes.

Add the garlic and cook for an additional minute.

Add the chipotle peppers and cook for 1-2 minutes, until fragrant.

Add the chicken and cook until browned on all sides, about 5-6 minutes.

Add the diced tomatoes, chicken broth, and tinga seasoning blend. Stir to combine.

Bring the mixture to a simmer and cook until the chicken is cooked through and the sauce has thickened, about 10-12 minutes.

Shred the chicken with two forks and stir to combine with the sauce.
