Irish Bacon Hash
A hearty breakfast dish featuring crispy Irish bacon and a crispy hash of potatoes and onions. Serve with eggs for a filling meal.

- β2 large, peeled and diced Potatoes
- β1 large, diced Onions
- β2 tablespoons Xtra Virgin Olive Oil
- β1 teaspoon Spicy Seasoning
- β Salt and Pepper

Preheat oven to 400Β°F (200Β°C).

In a large bowl, toss diced potatoes and onions with 1 tablespoon of olive oil, spicy seasoning, salt, and pepper until well coated.

Spread the potato mixture on a baking sheet and roast for 20 minutes, or until golden brown.

Meanwhile, cook Irish bacon in a skillet over medium heat until crispy. Flip halfway through.

After 20 minutes, remove the potato mixture from the oven and stir in the remaining tablespoon of olive oil.

To assemble the dish, place a portion of the hash on a plate, top with crispy bacon, and serve hot.
