Jamaican Tagine
A flavorful and aromatic tagine with Jamaican spices, perfect for a warm evening.
Ingredients
- β2 tablespoons Ground coriander
- β1 teaspoon Spicy xtraadjust to taste
- β1 teaspoon Jamaican seasoning
- β1 teaspoon Tagine spice blend
- β2 tablespoons Vegetable oil
- β1 large Onionschopped
- β3 cloves Garlicminced
- β2 medium Carrotspeeled and chopped
- β2 medium Potatoespeeled and chopped
- β1 cup Dried apricots

Heat oil in a large saucepan over medium heat.

Add onions and garlic, cook until softened (5 minutes).

Add ground coriander, Jamaican seasoning, and tagine spice blend, stir (1 minute).

Add carrots and potatoes, cook for 5 minutes.

Add dried apricots, stir to combine.

Bring to a boil, then reduce heat to low and simmer (30 minutes).

Season with spicy xtra, adjust to taste.

Serve warm, garnished with fresh herbs (optional).

Note: Traditionally, tagines are cooked in clay pots with a conical lid. If using a saucepan, cover with a lid to trap steam.
