Irish Brie and Xtra Gratin
A rich and creamy gratin featuring Irish cheddar and brie cheese, perfect for a cold winter evening.
Ingredients
- β1 cup, shredded Irish cheddar
- β8 oz, softened brie cheese
- β1/2 cup, shredded xtra cheese
- β1 cup, thinly sliced springy onions
- β2 large, thinly sliced gratin potatoes
- β2 tbsp unsalted butter
- β2 tbsp all-purpose flour

Preheat the oven to 375Β°F (190Β°C).

In a large saucepan, melt the butter over medium heat. Add the springy onions and cook until softened, about 5 minutes.

In a separate saucepan, combine the Irish cheddar, brie cheese, and xtra cheese. Stir until melted and smooth.

In a greased 9x13 inch baking dish, create a layer of springy onions. Top with a layer of grated cheese.

Repeat the layering process, starting with the onions and ending with a layer of cheese.

Roll out the gratin potatoes to a thickness of about 1/8 inch. Cut into long, thin strips and place on top of the cheese.

Dot the top of the potatoes with unsalted butter.

Sprinkle the all-purpose flour over the potatoes.

Bake the gratin in the preheated oven for 35-40 minutes, or until the potatoes are golden brown and the cheese is bubbly.
