Vegan Eggplant Casserole
A hearty, flavorful casserole perfect for a weeknight dinner, made with eggplant and a variety of spices.

- ●1 package Casserolegluten-free
- ●2 tablespoons Xtra Virgin Olive Oil
- ●1 medium Sweet Potato
- ●1 cup Irish Oats

Preheat oven to 375°F (190°C).

Cut the eggplant into 1/2-inch thick slices and set aside.

In a large skillet, heat the olive oil over medium heat.

Add the sliced eggplant and cook until tender, about 5 minutes per side.

In a separate skillet, cook the sweet potato in a little water until tender.

In a large mixing bowl, combine the cooked eggplant, sweet potato, and oats.

Mix well to combine.

Transfer the mixture to a 9x13 inch baking dish and top with the casserole package.

Bake for 25-30 minutes, or until the casserole is golden brown and the topping is crispy.
