Vibrant Vegetable Paella
A flavorful and colorful paella dish loaded with vibrant vegetables, perfect for a quick weeknight dinner.
Ingredients

- β2 tablespoons Vibrant
- β2 tablespoons Olive oil
- β1 medium Oniondiced
- β1 large Bell peppersliced
- β1 can (14 oz) Mediterraneandiced tomatoes
- β2 cups Vegetable broth
- β1 teaspoon Smoked paprika
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper

Heat olive oil in a large paella pan over medium-high heat.

Add diced onion and cook until translucent, about 3-4 minutes.

Add sliced bell pepper and cook for an additional 2-3 minutes.

Add vibrant and smoked paprika, stir to combine.

Add diced tomatoes, vegetable broth, salt, and black pepper. Stir to combine.
