Squash Jjigae aux Fromages
A French-inspired twist on Korean jjigae, featuring roasted squash, melted cheese, and a hint of buttery goodness.
Ingredients

- ●1 cup jjigaeKorean chili paste
- ●2 tablespoons butterunsalted
- ●2 tablespoons all-purpose flourgluten-free
- ●1 cup gruyère cheesegrated
- ●1/2 cup goat cheesecrumbly
- ●1 sprig fresh thymechopped

Preheat the oven to 400°F (200°C).

Toss the squash in a bowl with 1 tablespoon of butter, salt, and pepper until evenly coated.

Spread the squash on a baking sheet and roast for 20-25 minutes, or until tender.

In a large skillet, melt the remaining 1 tablespoon of butter over medium heat.

Add the flour and whisk to combine. Cook for 1 minute, stirring constantly.

Add the jjigae and cook for 2-3 minutes, stirring constantly.
