Caramelized Moroccan Vegetable Tagine
A hearty and flavorful vegetarian stew inspired by North African cuisine, featuring caramelized vegetables and creamy reblochon cheese.
Ingredients
- β1 block (225g) Reblochon cheesesoft cheese
- β2 medium Yellow onioncaramelized
- β4 medium Carrotscaramelized
- β2 medium Sweet potatoescaramelized
- β1 medium Green bell peppercaramelized
- β2 tsp Moroccan spice blend
- β2 tbsp Olive oil
- βto taste Salt

1. Heat oil in the bottom of a large clay or ceramic tagine or Dutch oven over medium heat.

2. Add the onion, carrots, sweet potatoes, and bell pepper. Cook, stirring occasionally, until the vegetables are caramelized, about 30 minutes.

3. Add the Moroccan spice blend and cook for 1 minute.

4. Crumble the reblochon cheese into the tagine and stir to combine.

5. Season with salt to taste.

6. Cover the tagine and transfer it to the oven. Bake at 375Β°F (190Β°C) for 20-25 minutes, or until the cheese is melted and bubbly.
