Jamaican Tofu Stir Fry
A flavorful and spicy Jamaican-inspired stir fry made with crispy tofu and mixed vegetables.
Ingredients
- ●1 block (12 oz) tofufirm or extra-firm tofu works best
- ●1 large yellow bell pepperany color bell pepper works but yellow is recommended
- ●1 medium onionany variety works
- ●3 cloves garlicminced
- ●2 tbsp citrusy soy saucehomemade or store-bought
- ●1 tsp jamaican curry powderadjust to taste
- ●1 tsp olive oilfor pan-frying
- ●to taste saltoptional
Instructions

Heat 1 tsp of olive oil in a large skillet over medium-high heat.

Add the minced garlic and sauté for 1-2 minutes, until fragrant.

Add the sliced bell pepper and cook for 3-4 minutes, until slightly tender.

Add the sliced onion and cook for another 3-4 minutes, until both the onion and bell pepper are tender.

Add the cubed tofu and cook for 3-4 minutes, until golden brown.

Sprinkle the Jamaican curry powder over the tofu and vegetables, and stir to combine.

Add the citrusy soy sauce and stir to coat.

Season with salt to taste, if desired.

Serve hot over rice or noodles, garnished with chopped fresh herbs if desired.
