Polish Banana Pancakes

- β1 tsp granulated sugar
- β1 tsp melted unsalted butter
- β1/4 cup yellow cornmeal
- β1 tsp vanilla extract
- β1/2 cup sour cream
- β1 tsp confectioner's sugarfor serving

1. In a large mixing bowl, combine the mashed bananas, pancake mix, eggs, sugar, and vanilla extract. Mix well until combined.

2. Heat a non-stick skillet or griddle over medium heat.

3. Using a 1/4 cup measuring cup, scoop the batter onto the skillet or griddle.

4. Cook the pancakes for 2-3 minutes or until bubbles appear on the surface and the edges start to dry.

5. Flip the pancakes and cook for an additional 1-2 minutes or until golden brown.
