Bean and Yellow Cheese Quesadillas
A delicious and easy-to-make Mexican-inspired dish filled with beans and melted yellow cheese. Perfect for a quick lunch or dinner.
Ingredients

- β1 can canned black beans
- β4 tortillas
- βto taste salt
- βto taste pepper
- β1 tsp mexican seasoning
- β1 tsp olive oil
Instructions

Heat a large skillet over medium-high heat.

Add a small amount of olive oil to the skillet.

Place a tortilla in the skillet and sprinkle with a quarter of the yellow cheese.

Add a quarter of the black beans on half of the tortilla.

Fold the tortilla in half and cook for 2-3 minutes or until the tortilla is crispy and the cheese is melted.

Flip the quesadilla and cook for an additional 2-3 minutes or until the other side is crispy.

Repeat with the remaining ingredients.
