Spicy Korean Ssam with Lemongrass
A flavorful and spicy Korean-inspired dish featuring tender pork, crunchy vegetables, and a citrusy lemongrass twist. Serve with a side of steamed rice for a satisfying meal.

In a small bowl, whisk together gochujang, soy sauce, brown sugar, and 2 tbsp water to make the marinade.

Add the sliced pork to the marinade and mix well to coat. Let it sit for at least 30 minutes, or up to 2 hours in the refrigerator.

Preheat a grill or grill pan to medium-high heat. Remove the pork from the marinade and cook for 5-7 minutes per side, or until cooked through.

Let the pork rest for 5 minutes before slicing it thinly against the grain.

In a large bowl, combine the sliced pork, minced lemongrass, thinly sliced onion, and crunchy kimchi. Mix well to combine.

Warm the ssam lettuce leaves by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

Assemble the ssam by placing a few slices of the pork mixture onto a lettuce leaf, followed by a sprinkle of kimchi. Serve immediately and enjoy!
