Saudi Arabian Lentil Stew
A hearty and comforting stew originating from Saudi Arabia, made with yellow lentils and flavorful earthy spices.
Ingredients
- β1 cup yellow lentilsRinsed and drained
- β2 teaspoons earthly spice blendAvailable at most Middle Eastern markets
- β1 medium onionChopped
- β3 cloves garlicMinced
- β2 saudi chili peppersDiced
- β1 teaspoon arabian corianderGround
- β1 teaspoon saltTo taste
- β4 cups waterVegetable or chicken broth can be used instead

Heat oil in a large pot over medium-high heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and saudi chili peppers and cook for another minute.

Add the yellow lentils, earthly spice blend, arabian coriander, and salt. Stir to combine.

Add the water and bring to a boil.

Reduce the heat to low and simmer, covered, for 30-40 minutes, or until the lentils are tender.

Stir in some chopped fresh cilantro or parsley, if desired.
