Tunisian Yellow Bean Stew
A hearty, comforting stew from Tunisia, featuring yellow beans and a blend of aromatic spices.
Ingredients
- ●1 cup, dried yellow beanssoaked overnight and drained
- ●2 tablespoons earthly tunisian olive oiluse for cooking
- ●1 medium onionchopped
- ●3 cloves garlicminced
- ●1 teaspoon tagine spice blendstore-bought or homemade
- ●1/2 teaspoon cuminground
- ●1 cup white riceuncooked
- ●to taste saltoptional
Instructions

Heat the olive oil in a large pot over medium heat.

Add the chopped onion and sauté until softened, about 5 minutes.

Add the minced garlic and sauté for an additional minute.

Add the soaked and drained yellow beans, tagine spice blend, and cumin to the pot.

Stir to combine, then add 2 cups of water to the pot.

Bring the mixture to a boil, then reduce heat to low and simmer, covered, for 30 minutes.
