Tonkotsu Ramen
A Japanese-inspired Tonkotsu Ramen recipe with a rich pork bone broth, topped with a soft-boiled egg and green onions.
Ingredients
- β2 lbs Pork Bones
- β1 medium Yellow Onionthinly sliced
- β2 tbsp Fermented Soybeans
- β1 package Japanese Ramen Noodles
- β2 tsp Fish Sauce
- β1 bunch Green Onionsthinly sliced
- β2 Soft-Boiled Egg
- β2 tbsp Soy Sauce
- β1 tsp Miso Paste

1. Preheat the oven to 400Β°F (200Β°C).

2. In a large roasting pan, combine the pork bones and onion. Roast for 30 minutes.

3. In a large stockpot, combine the roasted pork bones, onion, and 4 cups of water. Bring to a boil, then reduce the heat to a simmer and cook for 2 hours.

4. Strain the broth through a fine-mesh sieve into a clean stockpot. Discard the solids.

5. In a small saucepan, combine the fermented soybeans, soy sauce, and miso paste. Whisk until smooth.

6. Add the fish sauce to the saucepan and whisk to combine.

7. Add the saucepan mixture to the strained broth and whisk to combine.

8. Cook the ramen noodles according to the package instructions. Drain and set aside.

9. Divide the noodles among four bowls. Ladle the hot broth over the noodles.

10. Top each bowl with a soft-boiled egg, green onions, and a sprinkle of sesame seeds.
