Traditional Egyptian Beef Tagine
A hearty and flavorful North African dish made with tender beef, sweet vegetables, and aromatic spices. Serve with crusty bread or couscous.
Ingredients
- β1.5 pounds Beef Steak (1.5 lbs)Cut into 1-inch cubes
- β2 medium Yellow Onions (2 medium)
- β1 cup Egyptian Glazed Apricots (1 cup)
- β3 cloves Garlic (3 cloves)
- β1-inch piece Ginger (1-inch piece)
- β1 teaspoon Cumin (1 tsp)
- β1 teaspoon Coriander (1 tsp)
- β1/2 teaspoon Cayenne Pepper (1/2 tsp)
- β1 teaspoon Salt (1 tsp)
- β1 teaspoon Black Pepper (1 tsp)

Heat 2 tablespoons of oil in the bottom of a large clay or ceramic tagine over medium heat.

Add the garlic and ginger and cook, stirring occasionally, for 2 minutes.

Add the beef and cook until browned on all sides, about 5 minutes.

Add the onions, cumin, coriander, cayenne pepper, salt, and black pepper. Cook, stirring occasionally, for 5 minutes.

Add the apricots and 2 cups of water. Bring to a boil, then cover and simmer for 1 1/2 hours, or until the beef is tender.

Serve hot, garnished with fresh parsley or cilantro.
