Spicy Korean-Style Tofu Sujebi Soup
A spicy, comforting Korean-inspired soup made with chewy sujebi (hand-made noodles), crispy tofu, and a flavorful broth.
Ingredients
- β1 block (14 oz) Tofucubed
- β2 tsp Yellow Korean Chili Flakes (gochugaru)adjust to taste
- β2 tbsp Korean chili paste (gochujang)adjust to taste
- β8 oz Sujebi (hand-made noodles)dried or fresh
- β2 tbsp Vegetable oildivided
- β2 cloves Garlicminced
- β1 tsp Gingergrated
- β1 tsp Fish sauceoptional
- β1 tsp Saltadjust to taste
- β1/4 tsp Black pepperadjust to taste
Instructions

Heat 1 tbsp of vegetable oil in a large pot over medium heat.

Add garlic and ginger and sautΓ© until fragrant.

Add Korean chili paste and stir for 1 minute.

Add cubed tofu and cook until lightly browned.

Add fish sauce (if using) and stir to combine.

Add 4 cups of water and bring to a boil.

Add sujebi noodles and cook according to package instructions.

Add yellow Korean chili flakes and stir to combine.

Season with salt and black pepper to taste.
