Middle Eastern Maqluba with Roasted Beetroot
A flavorful and nutritious Middle Eastern dish made with roasted beetroot, tender chicken, and fluffy rice. This maqluba is perfect for a warm evening meal.

- β1 pound chicken breast
- β1 cup middle eastern rice mix
- β2 medium yellow onions
- β2 tablespoons olive oil
- β1 teaspoon eastern spices
- βto taste salt
- β1/4 cup fresh parsley

1. Preheat oven to 400Β°F (200Β°C).

2. Peel and chop the beetroot into large chunks. Toss with 1 tablespoon of olive oil, salt, and eastern spices. Spread on a baking sheet and roast for 30 minutes.

3. In a large pot, heat the remaining 1 tablespoon of olive oil over medium heat. Add the chopped yellow onions and cook until softened.

4. Add the chicken breast to the pot and cook until browned on all sides.

5. Add the middle eastern rice mix to the pot and stir to combine with the chicken and onions.

6. Add 2 cups of water to the pot and bring to a boil.
