Spicy Ethiopian Yellow Pasta
A flavorful and spicy Ethiopian-inspired pasta dish featuring yellow rigatoni, rich shiro sauce, and a hint of spice.
Ingredients

- β1 cup yellowchopped
- β2 tsp spicedEthiopian spice blend
- β2 cups shiroEthiopian chickpea paste
- β2 tbsp vegetable oil
- β2 cloves garlicminced
- β1 medium onionchopped
- β1/4 cup fresh cilantrochopped

Bring a large pot of salted water to a boil and cook the rigatoni according to the package instructions.

In a large skillet, heat the vegetable oil over medium heat. Add the garlic and onion and cook until the onion is translucent.

Add the Ethiopian spice blend and cook for 1 minute, stirring constantly.

Add the shiro paste and cook, stirring constantly, for 2-3 minutes.

Add the chopped yellow and cook for an additional 2-3 minutes, stirring constantly.

Drain the cooked rigatoni and add it to the skillet with the shiro sauce. Toss to combine.
