Indian-Style Grilled Chicken Tacos
Spice up your tacos with the flavors of India. Marinated chicken is grilled to perfection and served in tacos with your favorite toppings.
Ingredients

- β1/2 cup indian yogurtplain, non-fat
- β2 tablespoons yellow curry powder
- β1 tablespoon spicy chili powder
- β1 teaspoon cumin
- β2 cloves garlicminced
- β2 fajita-sized bell peppers
- β1 small onionsthinly sliced
- β8-10 tortillas (corn or flour)
- β shredded cheese (optional)Monterey Jack or Cheddar
- β sour cream (optional)
- β cilantro (optional)

In a blender or food processor, combine yogurt, curry powder, chili powder, cumin, garlic, and 1 tablespoon water. Blend until smooth.

Add the chicken to the marinade, turning to coat. Cover and refrigerate for at least 30 minutes or up to 2 hours.

Preheat grill to medium-high heat. Remove the chicken from the marinade, letting any excess liquid drip off.

Grill the chicken for 5-7 minutes per side, or until it reaches an internal temperature of 165Β°F (74Β°C).

Meanwhile, grill the bell peppers and onions for 5-7 minutes per side, or until they are tender.

Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

Assemble the tacos by slicing the grilled chicken and placing it on a warmed tortilla, followed by a spoonful of grilled peppers and onions. Serve with your favorite toppings.
