Malaysian Pork Satay
A flavorful and spicy satay dish originating from Malaysia, featuring marinated pork tenderloin.
Ingredients
- β500g pork tenderloinpreferably 1-2
- β250ml yellow coconut milk
- β200ml spicy peanut sauce
- β20 satay skewerssoaked in water for at least 30 minutes
- β2 tablespoons coconut sugar
- β2 tablespoons coriander
- β1 tablespoon cumin
- β3 cloves garlic
- β1 teaspoon salt
- β2 tablespoons peanut oil

1. In a blender or food processor, combine coconut sugar, coriander, cumin, garlic, and salt to make the spice paste.

2. Trim any excess fat from the pork tenderloin and cut it into 1-inch pieces.

3. In a large bowl, mix together the spice paste, coconut milk, and spicy peanut sauce.

4. Add the pork pieces to the marinade and mix well to coat.

5. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.

6. Preheat a grill or grill pan to medium-high heat.
