Spicy Thai Chicken Skewers
A simple and flavorful Thai-inspired dish featuring chicken skewers marinated in a spicy and aromatic sauce.
Ingredients
- β500g chicken breastcut into 1-inch pieces
- β2 yellow chiliesfinely chopped
- β4 cloves garlicminced
- β2 tbsp fish sauceoptional
- β1 tbsp brown sugaroptional
- β2 tbsp soy sauceoptional
- β100ml coconut milkoptional
- β1/4 cup thai basil leaveschopped
- β2 stalks lemongrassbruised
- β2 tbsp vegetable oilfor brushing

Preheat grill to medium-high heat.

In a blender or food processor, combine yellow chilies, garlic, fish sauce, brown sugar, soy sauce, and coconut milk (if using). Blend until smooth.

Add the blended mixture to the chicken pieces and marinate for at least 30 minutes.

Thread the marinated chicken onto skewers, leaving a small space between each piece.

Brush the grill with vegetable oil to prevent sticking.

Grill the skewers for 8-10 minutes per side, or until cooked through.

Transfer the skewers to a plate and garnish with chopped thai basil leaves and bruised lemongrass.
