Sunny Corn Pilaf
A flavorful and easy-to-make pilaf dish packed with the sweetness of corn and the warmth of Turkish spices.
Ingredients

- β1 cup yellow corn kernels
- β1 medium sunny yellow bell pepperdiced
- β2 tablespoons olive oilfor cooking

Heat the olive oil in a large saucepan over medium heat.

Add the diced yellow bell pepper and cook for 3-4 minutes until tender.

Add the Turkish pilaf rice and cook for 1-2 minutes until lightly toasted.

Add the yellow corn kernels and stir to combine.

Season with salt and black pepper to taste.

Pour in 2 cups of water and bring to a boil.

Reduce the heat to low, cover, and simmer for 18-20 minutes until the water is absorbed.
