Canadian Tagine Stuffed Yellow Peppers
A flavorful and healthy vegetarian dish, where bell peppers are stuffed with a mixture of quinoa, vegetables, and spices, cooked in a tagine.
Ingredients
- β4 yellow bell peppers
- β1 cup quinoauncooked
- β2 tsp Canadian tagine spice blend
- β2 tbsp olive oil
- β1 onionchopped
- β2 cloves garlicminced
- β1/4 cup seeds (pumpkin or sunflower)chopped
- β1/4 cup chopped fresh parsleyoptional

Preheat oven to 375Β°F (190Β°C).

Cut the tops off the peppers and remove seeds and membranes.

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Stir in the tagine spice blend and cook for 1 minute.

In a large bowl, combine the cooked quinoa, cooked onion mixture, and chopped seeds.

Stuff each pepper with the quinoa mixture and place in a baking dish.

Cover the dish with aluminum foil and bake for 25 minutes.

Remove the foil and bake for an additional 10-15 minutes, until the peppers are tender.
