Syrian Kabocha Stew
A hearty and comforting stew made with kabocha squash, inspired by the flavors of Syria. The velvety texture of the squash pairs perfectly with the spices and the yellow color adds a pop of brightness to the dish.
Ingredients
- β1 medium kabocha squashabout 2 lbs
- β2 tbsp olive oil
- β1 medium onion
- β3 cloves garlic
- β1 tsp cumin
- β1 tsp coriander
- β1 tsp salt
- β1/2 tsp black pepper
- β1 medium yellow bell pepper
- β2 cups chicken broth

Heat the olive oil in a large pot over medium heat.

Add the onion and garlic and cook until softened, about 5 minutes.

Add the cumin, coriander, salt, and pepper and cook for 1 minute.

Add the kabocha squash and yellow bell pepper and cook for 5 minutes.

Add the chicken broth and bring to a boil.
