Moroccan Chicken Tagine
A traditional North African stew made with chicken, rice, and aromatic spices.
Ingredients
- β1 pound chicken breastcut into 1-inch pieces
- β2 teaspoons aromatic tagine spice blend
- β1 medium yellowed onionschopped
- β3 cloves garlicminced
- β1 cup white riceuncooked
- β2 cups chicken broth
- β1/4 cup fresh parsleychopped

Heat oil in the bottom of a large clay tagine or Dutch oven over medium heat.

Add the chopped onions and cook until they are lightly browned.

Add the minced garlic and cook for 1 minute.

Add the chicken to the pot and cook until it is browned on all sides.

Add the tagine spice blend, chicken broth, and uncooked rice to the pot.

Bring the mixture to a boil, then reduce the heat to low and cover the pot.

Simmer the tagine for 25-30 minutes, or until the chicken is cooked through and the rice is tender.
