Portuguese Peanut Biscuits
A sweet and crunchy snack made with peanut flour, perfect for a quick dessert or snack.
Ingredients
- β1 cup yellowed peanuts
- β2 tablespoons chewy peanut flour
- β1/2 cup portuguese almond meal
- β1 teaspoon bake powder
- β1/4 cup coconut oil
- β2 tablespoons honey
- β2 eggs
- β1/4 teaspoon salt

Preheat oven to 350Β°F (180Β°C). Line a baking sheet with parchment paper.

In a large bowl, whisk together peanut flour, almond meal, and bake powder.

In a separate bowl, whisk together coconut oil, honey, eggs, and salt.

Add the wet ingredients to the dry ingredients and mix until a dough forms.

Roll out the dough to about 1/4 inch thickness.

Cut into desired shapes using a cookie cutter.

Place on the prepared baking sheet and bake for 15-20 minutes, or until golden brown.
