Australian Frittata with Crisp Vegetables

- β1 cup Crisp vegetables (bell peppers, onions, mushrooms)
- β1/2 cup shredded Yellowed (aged) cheddar cheese
- β6 large Eggs
- βto taste Salt and pepper
- β1/4 cup chopped Fresh parsley

In a large skillet, heat 1 tablespoon of oil over medium-high heat.
