Tunisian Vegetable Tagine
A flavorful and aromatic North African-inspired vegetable stew, served over basmati rice. This dish is a perfect blend of Tunisian and Indian spices.
Ingredients
- β2 medium yellow onion
- β1 large crisp bell pepper
- β1/4 cup tunisian olives
- β2 cups vegetable broth
- β2 tsp tagine spice blendUse a mix of cumin, coriander, cinnamon, and turmeric
- β2 tbsp ghee or vegetable oil
- β1 cup basmati rice
- β1/4 cup fresh parsley
Instructions

Heat oil in a large Dutch oven over medium heat.

Add onion and bell pepper, cook until softened, about 5 minutes.

Add olives, broth, and spice blend. Stir to combine.

Bring to a boil, then reduce heat to low and simmer, covered, for 20 minutes.

Stir in ghee or oil. Serve over basmati rice, garnished with parsley.
