Satay with Crunchy Fried Shallots
A Malaysian-inspired appetizer featuring skewers of satay chicken, served with a side of crunchy fried shallots and creamy mascarpone sauce.
Ingredients
- β500g Chicken breastcut into bite-sized pieces
- β1 Yellowed onionthinly sliced
- β100g Crunchy peanutschopped
- β200g Mascarpone cheesefor the sauce
- β2 tbsp Malaysian satay spice blendstore-bought or homemade
- β200g Shallotsthinly sliced
- β2 tbsp Vegetable oilfor frying

Preheat the grill to medium-high heat.

Thread the chicken pieces onto skewers and brush with the satay spice blend.

Grill the satay for 5-7 minutes per side, or until cooked through.

Meanwhile, heat the vegetable oil in a pan over medium heat.

Add the sliced shallots and fry until crispy, stirring frequently.

Drain the fried shallots on paper towels and season with salt.

In a separate pan, melt the mascarpone cheese over low heat.

Stir in the chopped peanuts and cook until the sauce is smooth.
