Chaozhou Chicken and Dumplings
A hearty, comforting soup originating from Chaozhou, China. Fluffy dumplings and tender chicken are slow-cooked in a rich broth.
Ingredients
- β1 pound chicken breast
- β2 tablespoons chaozhou
- β1 piece yellowed old gingerabout 1 inch long
- β4 cups chicken broth
- β2 cups all-purpose flour
- β2 cups water
- β1 bunch scallions

In a large pot, combine chicken broth, chaozhou, and yellowed old ginger. Bring to a boil over high heat.

Reduce heat to low and simmer for 10 minutes.

While the broth is cooking, make the dumpling dough by mixing flour and water until a dough forms.

Knead the dough for 5 minutes and divide into small balls.

Once the broth has simmered for 10 minutes, add the chicken breast and cook until it's cooked through.

Add the dumpling balls to the pot and cook for an additional 5 minutes.
