Bacon and Yellowed Potato Casserole
A rich and satisfying casserole made with yellowed potatoes, crispy bacon, and a hint of Portuguese flair. Perfect for a cold winter's night.
Ingredients
- ●3 large Yellowed Potatoespeeled and thinly sliced
- ●6 slices Baconcrispy, diced
- ●1 large Roasted Onionsfinely chopped
- ●1 cup Casseroles Cheeseshredded, cheddar-style
- ●1/4 cup Fresh Parsleychopped, for garnish
- ●to taste Salt and Pepper
- ●2 tablespoons Olive Oil

Preheat the oven to 375°F (190°C).

In a large skillet, cook the bacon over medium heat until crispy. Remove from heat and set aside.

In the same skillet, add the olive oil and sauté the chopped onions until softened.

Add the sliced potatoes to the skillet and cook for 5 minutes, stirring occasionally.

In a separate mixing bowl, combine the shredded cheese, cooked bacon, and chopped parsley.

In a greased 9x13-inch baking dish, arrange a layer of potatoes, followed by a layer of the cheese mixture.

Repeat the layers two more times, ending with a layer of potatoes on top.

Cover the dish with aluminum foil and bake for 30 minutes.

Remove the foil and continue baking for an additional 15-20 minutes, or until the potatoes are golden brown.
