Smoky Soba Noodle Stir Fry
A Japanese-inspired stir fry featuring smoked squid, served over a bed of yellowed soba noodles.
Ingredients
- β8 oz Soba Noodlespreferably yellowed
- β1/2 cup, sliced Smoked Squiduse store-bought or homemade
- β2 tbsp Japanese Sesame Oil
- β2 tbsp Soy Sauce
- β1/4 cup, thinly sliced Green Onions
- β1 tsp Sesame Seeds
- βto taste Salt

Bring a large pot of salted water to a boil. Cook the soba noodles according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

In a large skillet, heat the sesame oil over medium-high. Add the sliced squid and cook for 2-3 minutes, until browned.

Add the soy sauce to the skillet and stir to combine. Cook for an additional 1-2 minutes, until the squid is coated.

Add the cooked soba noodles to the skillet, tossing to combine with the squid and sauce. If the noodles seem dry, add a bit of the reserved pasta water.

Transfer the noodles to a serving dish. Garnish with green onions, sesame seeds, and a pinch of salt.
