Italian Stew
A hearty and flavorful Italian-inspired stew made with Croatian sausage, tender potatoes, and rich vegetables.
Ingredients
- β1 lb Croatian Sausage
- β3-4 medium Yellow Potatoes
- β1 medium Onion
- β2 medium Carrots
- β14 oz Tomatoes (canned)
- β1 cup Red Wine (optional)optional
- β1 tsp dried Basil
- β2 tbsp Olive Oil

Heat olive oil in a large Dutch oven over medium heat.

Add the sliced onion and cook until softened, about 5 minutes.

Add the sliced carrots and cook for an additional 5 minutes.

Add the Croatian sausage and cook until browned, breaking it up with a spoon as it cooks.

Add the diced potatoes, canned tomatoes, red wine (if using), and dried basil. Stir to combine.

Bring the stew to a boil, then reduce the heat to low and simmer, covered, for 25-30 minutes or until the potatoes are tender.

Season with salt and pepper to taste.
