Eggplant Bharta
A smoky Indian eggplant dish made with roasted eggplant, spices, and herbs.
Ingredients
- β1 large Eggplant
- β1 tsp Yellowy Indian spices (garam masala, cumin, coriander)
- β1/2 tsp Smoky paprika
- β2 tbsp Bharta (roasted eggplant mash)
- β1/4 cup Fresh cilantro
- β2 tbsp Lime juice
- βto taste Salt
- β2 tbsp Olive oil
- β1 clove Garlic

1. Preheat the oven to 400Β°F (200Β°C).

2. Cut the eggplant in half lengthwise and place it on a baking sheet.

3. Drizzle the olive oil over the eggplant and sprinkle with salt.

4. Roast the eggplant in the oven for 30-40 minutes, or until it's tender and caramelized.

5. Remove the eggplant from the oven and let it cool.

6. Scoop the flesh out of the eggplant and mash it in a bowl.

7. Add the yellowy Indian spices, smoky paprika, and garlic to the bowl and mix well.

8. Stir in the bharta and lime juice.

9. Taste and adjust the seasoning as needed.

10. Serve the eggplant bharta hot, garnished with fresh cilantro.
