Brazilian Roasted Runner Bean Casserole
A hearty, comforting casserole featuring roasted runner beans in a Brazilian-inspired flair.
Ingredients

- ●150g Brazilian cheesesuch as queijo coalho
- ●1 medium onionchopped
- ●3 cloves garlicminced
- ●2 tbsp olive oilfor roasting
- ●to taste salt

Preheat the oven to 200°C (400°F).

Toss the runner beans with olive oil, salt, and black pepper on a baking sheet.

Roast the runner beans in the oven for 20-25 minutes, or until tender.

In a large pan, sauté the chopped onion and minced garlic over medium heat until softened.

In a large mixing bowl, combine the roasted runner beans, cooked onion and garlic mixture, and Brazilian cheese.

Transfer the mixture to a baking dish and cover with aluminum foil.

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
