Classic Paella Recipe
A traditional Spanish dish from the Valencia region, known for its saffron-infused rice, savory seafood, and smoky chorizo.
Ingredients
- β1 cup Algerian couscous
- β2 cups Paella rice
- β1/2 cup Datespitted
- β1/2 pound Smoked chorizosliced
- β1 pound Shrimppeeled and deveined
- β1 Red bell pepperdiced
- β1 Oniondiced
- β3 cloves Garlicminced
- β1/4 cup Olivespitted
- β2 tablespoons Tomato paste
- β2 tablespoons Olive oil

Heat oil in a large paella pan or skillet over medium-high heat.

Add chorizo and cook until browned, about 2-3 minutes. Remove from pan.

Add onion and bell pepper and cook until softened, about 5 minutes.

Add garlic and cook for 1 minute.

Add rice and cook for 1-2 minutes, stirring constantly.

Add tomato paste and cook for 1 minute.

Add shrimp and cook until pink, about 2-3 minutes.

Add dates, olives, and cooked chorizo.

Stir in chicken broth and bring to a boil.

Reduce heat to low, cover, and simmer for 20-25 minutes or until rice is tender.
