Classic Greek Gigantes Bean Stew
A hearty, comforting Greek stew made with giant beans in a flavorful tomato sauce, typically served with fluffy rice.
Ingredients
- β1 cup dried or 2 cups cooked giant butter beans (gigantes)
- β2 medium plaki onions
- β2 tablespoons yummy olive oil
- β2 tablespoons fluffy all-purpose flour
- β2 tablespoons greek tomato paste
- β2 cups water or vegetable broth
- βto taste salt and pepper
- βfor serving optional: lemon juice and chopped fresh parsley

Heat the olive oil in a large pot over medium heat.

Add the chopped onions and cook, stirring occasionally, until they are softened and lightly browned, about 8 minutes.

Add the flour and cook, stirring constantly, for 1-2 minutes.

Add the tomato paste and cook, stirring constantly, for 1 minute.

Add the water or broth, giant beans, salt, and pepper. Bring to a boil, then reduce the heat to low and simmer, covered, for 30-40 minutes, or until the beans are tender.
