Ethiopian Stew with Pistachio Crunch

- β1 large garlicky onionschopped
- β1/4 cup pistachiochopped
- β2 medium stew peppersany color
- β3 cloves garlicminced
- β2 tbsp olive oilfor sautΓ©ing
- β1 tsp Ethiopian spice blendavailable at most spice shops
- βto taste salt
- βto taste black pepper

Instructions

Heat the olive oil in a large pan over medium heat.

Add the chopped onions and cook until softened, about 5 minutes.

Add the minced garlic and cook for another minute.
