Keto Eggplant Gratin
A flavorful and low-carb eggplant gratin that's perfect for a keto diet. Roasted eggplant and melted cheese make this dish a satisfying side or main course.
Ingredients

- β1 cup Grated Parmesan Cheese
- β1/4 cup Fresh parsleychopped
- βto taste Salt
- βto taste Black pepper
- β2 cloves Garlic
- β2 tablespoons Olive oil

Preheat oven to 375Β°F (190Β°C).

Cut the eggplant into 1/2-inch thick slices and place on a baking sheet lined with parchment paper.

Drizzle the eggplant slices with olive oil and sprinkle with salt, black pepper, and minced garlic.

Roast the eggplant in the preheated oven for 20-25 minutes, or until tender and lightly browned.

In a separate bowl, mix together the grated Parmesan cheese and chopped parsley.

To assemble the gratin, spread a layer of the Parmesan cheese mixture on the bottom of a 9x13-inch baking dish.
