Slow Cooked Pork Knuckle Thai Curry

Ingredients
- β1.5 kg Pork Knuckle
- β1 can (400ml) Coconut Milk
- β2 tbsp Thai Red Curry Paste
- β2 tbsp Fish Sauce
- β2 tbsp Brown Sugar
- β2 tbsp Lime Juice
- β2 tbsp Vegetable Oil
- β3 cloves Garlic
- β2 inches Ginger
Instructions

Heat oil in a large bowl over medium heat.

Add garlic and ginger, cook until fragrant.

Add curry paste, cook for 1 minute.

Add coconut milk, fish sauce, brown sugar, and lime juice. Stir well.

Add the pork knuckle, cover the bowl and cook on low heat for 2 hours.

Increase heat to medium-high, cook for an additional 10 minutes.
